Hello readers! Today I'm going to teach you how to make Carrot Top Mint Pesto! Instead of throwing out your carrot tops, embrace them. Let's get started!


Ingredients


1 cup of washed carrot tops

1/4 cup toasted pine nuts

2 minced garlic cloves

1/2 cup of mint leaves

3 tbsp lemon juice

1/4 cup of olive oil


Instructions

  1. Blend the carrot tops, mint, garlic, lemon juice and pine nuts in a food processor until fully combined.

  2. Slowly add the olive oil. Can be refrigerated for up to three days.
