Ingredients
1 cup of washed carrot tops
1/4 cup toasted pine nuts
2 minced garlic cloves
1/2 cup of mint leaves
3 tbsp lemon juice
1/4 cup of olive oil
Instructions
Blend the carrot tops, mint, garlic, lemon juice and pine nuts in a food processor until fully combined.
Slowly add the olive oil. Can be refrigerated for up to three days.
